Und so geht's:
Prepare the layers & filling
Bake your favorite sponge recipe, level the layers if needed and fill as desired. Chill the filled cake until it is stable.
Prepare the fins
Melt white chocolate or candy melts, tint them in your desired colors and pour into the silicone mold. Let set well (ideally in the freezer). Carefully release and set aside for later.
Tint the buttercream
Whip butter, powdered sugar and milk/cream into a firm American buttercream (at least 15 minutes). Divide it into three portions and tint them turquoise, pink and purple.
Coat the cake with a color gradient
Apply the three buttercream colors on top of each other on the outside of the cake (from bottom to top: e. g. purple → turquoise → pink).
Smooth carefully with a dough scraper so a soft ombré look is created.
Pipe the coral look
Use a small round tip to pipe small bubbles & waves in matching colors with the remaining buttercream to create the coral texture.
Decorate
Place the fins on the cake. Finish with Choco XXL balls, sprinkles and small buttercream dots (star tip) – and your magical mermaid cake is ready! 🌊🧜♀️✨
